Description
The Iranian pistachio kernel is the most delicious pistachio kernel in the world because of its unique flavour that is due to the climate. Kernels are taken through a shell removal process, meaning that they are not presented in a shell at the end of the production process. Raw Kernels and Green Peeled Kernels come from raw pistachio as it is harvested one to two months before the harvest season. The Normal Kernel comes from un-shelling the closed shell pistachio.
Raw Kernels
Raw kernel pistachios are taken from trees when the pistachios are still raw and not reached the level of maturity, this is the reason for being green.This green color of the raw Kernel pistachio makes it an ideal product for all confectionery and decorative purposes.
Green Peeled kernel
This kernel is the most premium and expensive among all types of kernels. Green peeled kernels come from raw kernel softer the shell removal process, the peel is also removed. They can be classified into 4-5 types, which are different in the percentage of green color in them, for instance dark green, green, greenish, yellow and light yellow.
Normal (Natural) Kernels
This type of kernel comes from the closed shell pistachios and it is more reasonable and more affordable in price. It is also suitable for confectionaries or cooking where the kernel needs to be blended or powdered. The color of skin is purple and Brown and inside is green and yellow.This type mostly comes from Round pistachio (Fandoghi) and Jumbo pistachio (Kaleghoochi).
